Percy Celso Olivares Polanco (born June 5, 1968 in Lima) is a retired football defender from Peru.

Olivares obtained 83 international caps for his national team, in which he scored one goal. He made his debut on June 19, 1987 against Chile (1-3), and played his last international match for his native country on June 2, 2001 against Ecuador (1-2), three days before his 33rd birthday.

Olivares played club football all over the world, including Sporting Cristal (Peru), Deportivo Cali (Colombia), Nürnberg (Germany), Tenerife (Spain), Fluminense (Brazil), Cruz Azul (Mexico), PAOK Thessaloniki FC, Panathinaikos (Greece), and Dallas Burn (USA).

He became very popular in Greece after his goal against Olympiacos FC (21 November 1999), when Panathinaikos won Olympiakos after 3 years (29/3/1996). He an impressive goal for PAOK Thessaloniki in a UEFA cup match against Sparta Prague when he scored a powerful strike from half way to win the game with a 5-3 aggregate.
