Manchester tart

A Manchester tart is a traditional English baked tart consisting of a shortcrust pastry shell, spread with jam, covered with a custard filling and topped with flakes of coconut and a Maraschino cherry. One variation includes slices of banana underneath the custard with the jam, though the original recipe has no bananas.
A staple on school dinner menus until the late 1970s, the original Manchester Tart is a variation on an earlier recipe, Manchester Pudding, which was written down by the Victorian cookery writer, Mrs Beeton.
