Joel Fuhrman, MD (born December 2, 1953), is an American author and board-certified family physician who specializes in preventing and reversing disease through nutritional and natural methods.
Fuhrman, who was born in New York, New York, is a former world-class figure skater. He was a member of the US World Figure Skating Team and placed second in the US National Pairs Championship in 1973.
Fuhrman is a graduate of the University of Pennsylvania School of Medicine in Philadelphia, Pennsylvania. Fuhrman is a member of the Board of Directors of the National Health Association and serves on the Advisory Panel of The Physicians Committee for Responsible Medicine. Fuhrman is a Diplomat of the American Academy of Family Physicians. Fuhrman is a member of the PriceWaterhouseCoopers Health and Performance Advisory Panel. Fuhrman is on the medical staff of Hunterdon Medical Center in Flemington, New Jersey, specializing in nutritional medicine. Fuhrman has received the St. Joseph’s Family Practice Resident’s Teaching Award for his contribution to the education of residents.
Fuhrman is the author of 6 books which include Eat To Live, Fasting & Eating for Health, Cholesterol Protection for Life, Disease Proof your Child, Eat Right America – Food Scoring Guide and Eat for Health.
Fuhrman has appeared on radio and television shows including: ABC, CBS, NBC, FOX, CNN, CBN[1], The Today Show, Good Morning America, Discovery Channel[2], TV Food Network, CNBC and XM Radio[3].

Fuhrman advises a diet based on mainly fresh vegetables, fruits, grains, and legumes, while limiting or ultimately eliminating animal products (meat and dairy items), and simple carbohydrate (or processed) foods. In contrast to other diets, such as Jenny Craig and Weight Watchers, which restrict the total caloric intake, though not the volume, of food a person can eat, Fuhrman's guidelines promote eating in abundance from the "allowed" groups. The reasoning is that whole plant foods are so high in fiber, bulk, and nutrients (including a wide variety of phytochemicals) that the dieter will achieve satiation (a feeling of fullness) long before he/she is able to consume too many calories from these foods.
Fuhrman maintains that feelings of sickness caused by skipping a meal, such as light-headedness, stomach cramping, and headache, are not symptoms of hunger, but symptoms of detoxification. He refers to these symptoms as "toxic hunger" and states that they eventually go away as the dieter adjusts to eating a low calorie, high phytonutrient diet.
