I recall reading somewhere that the addition of small quantities of sulfamic acid to amino acid solutions can help stabilise them in order to prevent decomposition during storage or transport. [edit] Unreliable/ambiguous picture?
This may seem pedantic, but the picture showing the normal (unionized) structure and zwitterionic structure may be confusing to some, as they may see it as one whole structure, so I propose it would be better to add a double arrow (equilibrium like) to show that the acid can exist in both of these forms.
