Naringinase

Naringinase is a debittering enzyme that is used in commercial production of grapefruit juice. It breaks down the compound Naringin in grapefruit juice that gives it a bitter taste.it is an multi enzyme complex . it has the alpha l- rehmanosidse & beta glucosidase activity .the E.C. no of the naringenase & rehmanosidase are the same . it firstly break the naringin in to the prunin i.e. less bitter substances & lastly it break the prunin in to the glucose . in this way fruit is bebittrinised. rhem gene is very rare gene ,it found in very few microorganism . like some bacillus spies & mainly nirangenase is hydolysed by the aspergelus niger . but isolation of the narin genase feom the fungus is difficult tusk .. & it take for growing several hours .so keeping this view it think that naringenase should be produced by the some bacteria . sevral workers have done work on this field .. but special work is done by the marvaha & the m.puri punjabi university , patiala.
