We're on English Wikipedia and we should use the most common form in English, at least that's our policy, which is applied throughout our encyclopedia for establishing the titles of the articles. So, it's not hard to see that Moritz Kaposi is a much more common form, when speaking about the Hungarian physician and dermatologist:

• Results 1 - 10 of about 12,900 for "Moritz Kaposi"
• Results 1 - 10 of about 65 for "Móric Kaposi"

Or, if you trust printed books more:

• Books 1 - 10 with 154 pages on "Moritz Kaposi"
• Your search - "Móric Kaposi" - did not match any documents.
