Loukaniko
From Wikipedia, the free encyclopedia
Loukaniko (λουκάνικο) or locanico is simply the normal Greek word for pork sausage, usually somewhat dried.
There is a variety of sausages in Greek cooking, but perhaps the best-known is flavored with fennel seeds and orange peel, sometimes smoked; another popular flavoring is greens, especially leeks.
Loukaniko is often served as a mezze, sliced and fried, sometimes with saganaki. It is also cooked into a variety of dishes.
The name 'loukaniko' comes from Latin lucanicum 'of Lucania',[1] and has been used in Greek since at least the 4th century.[2] Similar sausages are known throughout the Mediterranean; dried, spicy Lucania sausages were widely exported.[3]
