I'm fairly sure I don't agree that the entertainment industry encompasses "theme parks" and "discotheques" - any thoughts on where they would be more appropriate?

Why not? Theme parks are a form of entertainment and they are often elaborately designed and planned and include various other types of entertainment, live entertainment, recorded entertainment, theatre of sorts, just to name a few categories. Discotheques include the fields of lighting design, performances, and other elements that can clearly be identified as entertainment. We may also argue that Edutainment is not really one of entertainment industries too. I suggest to keep this definition a bit loose.
