I rewrote the first paragraph as there are multiple methods to produce Cidre de glace, all involving natural freezing. The issue is that very few cultivars of trees will still have fruits on their branches come winter time, so harvesting the apples in winter is not always possible. Hence the cryoconcentration methods involving harvest in late autumn and freezing of the harvested fruits, which is quite different from icewine production methods. I would cite La Face Cachée de la Pomme (as it is where I got the info I changed in the article) in the main article but it is a commercial site, so that would be promoting one producer above others. Maybe more neutral sources can be found.--Boffob 03:09, 6 September 2007 (UTC)
