Classic hummus, prepared at this home, photograph by Bruce Cameron [dumarest]


We lived in Beirut Lebanon for over a year in 1963, and this was the standard hummus - made by our cook and baby sitter, [admittedly from the Armenian diaspora] and by our friends [admittedly mostly displaced Palestinians but not all]. Whole chick-peas were standard as a garnish, and that is the detail given in a basic cookbook for Arabic cuisine [1]
