Pressure Cooking in India started in the late 1950s with the introduction of the pressure cooker by some companies. Slowly pressure cookers started to be made in India and made big inroads and today studies generally indicate that 40% of Indian Households use pressure cookers. The rapid increase of pressure cooker usage in India - roughly 5-7% of the world's households changing their cooking habits in 50 years can be because of the inherent advantages of the pressure cooker.

In India the pressure cooker is seen as a big fuel saver. The aspect of fuel saving is not very important amongst western consumers. But traditionally fuel is expensive and in India there is consciousness about high labour or monetary costs connected to pressure cooking.

The other reason seems to be the relative safety of the Indian pressure cookers. Also the food habits of Indians especially of eating pulses like Rajma and others which were notoriously hard to cook increased the popularity of pressure cookers.
