Flying Star is a privately owned and operated fast food restaurant chain in Albuquerque, New Mexico.

Flying Star's first location was opened in 1987 on Central in the Nob Hill area of Albuquerque, across from the UNM campus. At the time it was named Double Rainbow, as it was a franchisee of San Francisco ice cream chain of the same name.[1] The two businesses entered into an agreement regarding the common use of the name, but eventually the Albuquerque location wanted to branch out into food restaurants and the agreement was revisited; as a result, Flying Star changed their name.[2]
Since 1987 Flying Star has expanded to 6 locations in the Albuquerque metro area.[citation needed]

Two restaurants are planned. One in Bernalillo with a grand opening scheduled May 19th, 2008 and one a month later in Santa Fe.
