Korvasienten sisältämä myrkyllinen gyromitriini on ennen kastikkeen valmistusta erotettu sienistä keittämällä ja huuhtomalla sienet kahdesti virallisten käsittelyohjeiden mukaan. English: False morel (Gyromitra esculenta) mushroom sauce served with early potatoes, carrots and leek. Before preparing the sauce, the mushrooms have been boiled and rinsed twice in copious water, per the official Finnish preparation instructions, to leach away the poisonous gyromitrin in them.
