So these plants grow sans sunlight by using stored energy from the roots, right?

Yes, that is one way of preparing the plant for consumption. They can also be grown in the field by a process of "earthing up" the the growing plants, i.e. banking the soil against them to ensure that the foliage remains in darkness. —Preceding unsigned comment added by 69.229.98.62 (talk) 09:53, 11 December 2007 (UTC)
