Edward Salck

Edward Salck was born on the 12/10/1957 in Hamburg, Germany. After living in Germany for 20 years Edward moved to Melbourne, Victoria where he introduced the famous Hamburg cuisine, the Labskaus. For many years Edward sold the meal made from corned beef, herring, mashed potatoes, and beetroot from a small cart in such Melbourne city streets as Brunswick Street and Victoria Street.

After many years of selling Labskaus, Edward opened a store near Brunswick St. called "The Hamburg Labskaus", where he specialized in Labskaus, and also introduced new German Cuisine on his menu such as the Birnen and then Aalsuppe (Eel Soup). The Hamburg Labskaus eventually shut down in 1987. The Salck family attempted to get this building placed on heritage listing, although the attempt failed. The building is now a backpacker's hostel.
