Jenkins attended Miami Central High School in Florida. Winner of the prestigious Nick Kotys Award, given to Miami-Dade County's Male Athlete of the Year. First-team Class 6A All-State selection in 2001. Played in the Florida-Georgia All-Star Game.

Jenkins entered the University of Miami for the 2003 NCAA Season. Has career totals of 90 Receptions for 1364 Yards and 3 Touchdowns. Talented speedster with good hands who worked his way into the Hurricanes rotation at wide receiver in 2003 as a true freshman. Competed as member of the track and field team during the indoor season. In 2007, led the Hurricanes with 31 Receptions for 619 Yards and 2 Touchdowns. Led the Atlantic Coast Conference with a 20.0 Yard Per Catch Average. Jenkins did not fumble during his entire college career.

Jenkins declared for the 2008 NFL draft. Jenkins went undrafted but signed with the Houston Texans the following day.
