Hmm. I find this sentence a little contentious:
The greediest and less indeed raised, eat the small Canelé by pair. It is badly seen to eat big Canelé by means of a fork, nevertheless when they are served for dessert it is still the best means not to cover itself fingers’ of toffy
I'm thinking you may want to say something like:
It may be considered improper to eat 2 small canelés at a time. It is also considered uncouth to eat the large canelé with a fork; however when canelé are served as a dessert, it may be still preferable to eat the canelé with a fork in order to avoid sticky fingers.

Wow - this is a horrible translation from French - "deposit of the brand" ?? translated from "marque déposée"? As much as I love canelé, this article needs to be reviewed and rewritten by someone - maybe adding a recipe?? :) It should be a variation on a pâte à choux, so nothing too tough to make.
