Cahuamanta

Cahuamanta is a typical dish made with mataray and shrimp, usually it is prepared as soup, to which is added mantaray, shrimp and vegetables. It can be served as soup or it can be prepared as tacos. When served as soup, it is called Vichy or Chuky.

Originally, the main ingredient used to be the sea turtle, but due to it being placed on the endangered specied list it's hunting has been outlawed, manta ray and shrimp, became the main ingredient. This food was first created during the 19th century, in Ciudad Obregon, a city in the Mexico state of Sonora.
