Bi cha (បាយឆា) is the Cambodian variation of fried rice, characterized by its use of strong flavoring. Bi cha varieties range from those with more Chinese influence to those suited more to Cambodian flavor. The most common bi cha is bi cha sae cuot, with the use of Chinese sausage giving it a sweet taste and the heavy use of soy sauce and less eggs gives the rice a brown rather than yellow color.
